Green boiled olives

One of the finest olives in Syria. It is called Salqini after the city of
Salqin in Idlib Governorate. These olives are characterized by being relatively small in size.
It has a charming Mediterranean flavour and is picked green before it is fully ripe or black after it is ripe. The green variety is characterised by its extreme bitterness, so it is sweetened before it is prepared to be placed on the dining table.
