The blue color in blue cheeses is essentially a blue mold which occurs when a Penicillium-like organism is added to the milk or curds used to make regular white cheese. During three to six months of maturation, it is either in small, irregular natural holes in the cheese or in holes made by machine, depending on the type of cheese. Small amounts of the mold are reproduced or extended to give the typical blue streaks in white cheese, and once mature, the distinctive flavor is added. Blue cheeses are usually very salty.
