A thin, round piece of dough topped with minced local meat, chopped vegetables and herbs such as onions, tomatoes and parsley, then baked in the oven. It is often served wrapped with vegetables and pickles and sprinkled with ayran or turnips.
It is popular and famous in Syria as well as Palestine, Lebanon, and Jordan. The most famous types are the Damascene, Baalbek, Aleppo, and Armenian sfiha in Aleppo. The sfiha is also widespread in Brazil, where there is a large Levantine community in this country.
The sfiha basically depends on rolling out the dough, spreading it out, placing the seasoned minced meat on top of it, and then baking it in the oven, hence the name sfiha, as the dough is thin.
